Those you rob others as a profession. For it to become some sort of true profession it seems one must earn a name through robbing rare artifacts or highly unattainable merchandise that is valuable. The title of Greatest Thief in certain sectors seems to be a highly sought after and possibly respected to achieve like any other profession with being the best at it.
